Very rich and chocolaty!1/2 c. cocoa (brand name is best) 1 1/2 c. sugar 3 Tbsp. corn starch 1/2 tsp. salt 1 1/2 c. milk 1 1/2 c. Pet milk 3 egg yolks, beaten and set aside in a bowl 1 Tbsp. real butter 1 1/2 tsp. vanilla (real is best)
In a large saucepan mix together the first four ingredients. Gradually stir in milks. Cook over med heat, stirring until mixture thickens and boils. Boil 1 minute. Remove from heat. Spoon out a small amount of hot cocoa mixture into the beaten egg yolks and mix. Pour back into the saucepan, scraping the bowl clean and return to heat. Bring to another boil. Boil 1 minute stirring constantly. Add butter and vanilla. Remove from heat and stir until butter is melted. Pour into baked pie shell or into small dessert cups. Chill. Don't leave this unattended! It will scorch easily. If I'm making this for pie, I double the recipe to have a full, deep-dish pie or two 8-9" pies, and a little left over for snacking!
