Makes 1 Bundt Cake (you can frost if you wish. I have served plain, with ice cream, with fruit, with whipped topping or with just a glaze.)Cream: 1 1/2 sticks butter 1 1/2 c sugar 2 eggs 1 tsp vanilla
Add to the creamed mixture: 3/4 c sour cream
Mix together: 2 c unsifted flour 2/3 c coca
Add together: 2 tsp baking soda to 1 c buttermilk
Combine all ingredients and beat for two minutes at medium speed. Pour into greased and floured bundt pan and bake at 350 for 40-45 minutes. Let stand 15 minutes and then turn out onto plate.
Great cake - very moist and of course, very low in calories with all of these healthy foods. :-)
