My mom makes this every year for Thanksgiving, it's so delicious I end up eating it for breakfast for days after! But I can't get her to make it any other time of year. Ingredients: 2 c. Acini De Pepe, cooked in salt water Group 1: 1-3/4 c. pineapple juice 2 tbsp cornstarch 2 eggs 1/2 tsp salt 3/4 c. sugar Group 2: 1 lg. can crushed pineapple 1 lg. can pineapple chunks 2 cans mandarin oranges, drained 1 sm. package mini marshmallows 1 lg. tub Cool Whip
Boil group 1 ingredients in microwave until thickened. Stir often. Pour over hot acini de pepe. Refrigerate overnight or until cool. Mix group 2 ingredients and cooled acini de pepe mixture.
Note--other canned fruit can be added, such as peaches and pears, whatever you like.
Delicious! Serves about 10.
