Applesauce Pancake

serves 1

1/4 c applesauce
1 egg
1/3 c powdered milk
3 T flour
1/4 tsp cream of tarter
1/4 tsp baking soda
splash vanilla
cinnamon to taste

Mix (with mixer) together until smooth. Spray an 8" pie pan with PAM. Bake at 350 for 10-12 min. (until you see it's golden brown) Topping, if desired: 1 oz cream cheese 1 T peanut butter splash of vanilla sweetener to taste While pancake(s) are baking, cream ingredients together (with knife) until smooth. Spread on pancake. Or, add syrup instead of topping. ______________________________________________________________________ 1/2 very ripe banana can be substituted for applesauce. This recipe is also easy to double as the pre-packaged applesauce cups are 1/2 c. Pancakes, whether applesauce or banana, freeze well.
