Christy Jan's Candied Pe-Cans

2 lbs. Pecan halves
2 egg whites
pinch of salt
1 c. sugar

Spray two 9x13 pans with Pam.  Divide pecans; put half in one pan and
half in the other.  Toast them at 325 degrees for 5 minutes

Beat egg whites with salt until stiff but not dry.  Fold in the sugar
and then the toasted pecan halves.

Pour half of the melted butter in one pan and half in the other.  Divide
the nut mixture and put half in each pan.  Fold the mixture into the
melted butter with a wooden spoon.

Bake at 325 degrees, uncovered, for 10 minutes.  Stir,

Bake another 10 minutes.  Stir.

Bake an additional 10 minutes.  Stir.

Remove pans from the oven and spread the contents out on wax paper.  Let
cool slightly, and then separate.  Cool completely.
