2 cups all purpose flour 3 cups shredded carrots 2 cups sugar 1 cup cooking oil 1 tspn baking powder 4 eggs 1 tspn baking soda 1 tspn salt 2 tspn cinnamonPreheat oven to 325 degrees. Spray and flour a 13 x 9 inch pan or 2 round baking dishes. Mix the first six ingredients with an electric mixer. Add the next 3 ingredients. Beat at medium speed for two minutes. Bake the 13 x 9 pan for 50 - 60 minutes or the round pans for 40 minutes. Depending on your oven it might take a little longer. When cooled frost with cream cheese frosting.
