Heavy White Sauce 1/4 tsp. salt 1/8 tsp. pepper 1/4 c. butter (1/2 stick) 1/4 c. flour 1 cup milk Melt butter, add flour and milk. Add other ingredients. Cook over stove. Croquettes 1 c. thick white sauce 1 tsp. each, parsley and onion 2 c. meat or chicken shredded Mix all ingredients. Spread out on a plate or pie pan. Chill a few hours. Shape into balls. Roll in flour, then dip in mixture of 1 egg slightly beaten and 2 tsp. water then roll in fine bread crumbs. Fry in deep hot oil (365 degrees) until delicately browned. Be careful not to puncture during frying. Drain on absorbent paper and place in oven (350 degrees) until serving time. Makes 8
