Ginger Cookies

Makes 3-4 dozen
Preheat oven to 350 degrees.
1/2 cup butter, softened
1/2 cup sugar
1 egg
1/4 cup molasses
2 1/4 cups flour
3/4 tsp baking soda
1 Tbsp ground ginger
1/4 cup finely chopped crystallized ginger*
Beat together butter and sugar until creamy. Beat in egg and molasses.
Combine flour, baking soda and ginger in a small bowl; stir into butter
mixture. Roll into two disks, wrap in wax paper and refrigerate for one hour.
On a lightly floured surface roll one disk to 1/4 inch thick. Cut out
cookies. Transfer to ungreased cookie sheets. Chill for 10 minutes, then
bake 8-10 minutes or until lightly browned. Cool on wire racks.
While cooling, make frosting:
2 cups confectioners sugar
1/4 cup warm water
1 1/2 Tbsp powdered egg white**
Blend powdered sugar, egg white and warm warm in a bowl; beat on high
for 7 minutes until smooth with a honey-like consistency. Spread over
cooled cookies.
*Crystallized ginger can be found in the baking section of the grocery.
