This is the best use of turkey leftovers ever! I'm sure it's got a million bajillion calories, but it's too yummy to care... 4 Tablespoons butter 4 Tablespoons flour 2 cups whipping cream dash cayenne pepper 4 Tablespoons Parmesan cheese 4 slices bacon 4 slices white bread, crust removed 1/2 pound cooked, sliced turkeyMelt butter in saucepan. Add flour and stir until the paste is smooth, and golden brown. Cool. In a double boiler, heat 1 1/2 cups of whipping cream to almost a boil. Add cayenne pepper and then slowly add the cooled flour/butter mixture, whisking to keep smooth. Whip remaining 1/2 cup cream and add to sauce mixture along with 2 Tblsp. of Parmesan cheese. Keep warm. Saute or broil bacon until 3/4 done. Set aside. Toast bread. Cut diagonally. Place halves on 2 plates that can go into your broiler. Top each plate with half of the turkey and ladle sauce over the top. Lay bacon on top and sprinkle serving with a Tblsp. of cheese. Place under broiler until golden brown-- just a few minutes. Be careful of the hot plates as you sit down to a fabulous meal for two!
