Pineapple Pudding Fruit Salad

1 - 8 oz container light sour cream
1 - 8 oz light cream cheese
1 - large can crushed pineapple in own syrup (do not drain!)
1 sm pkg sugar free instant pistachio pudding
splash vanilla
sweetener to taste (I use approx 12 pkg of Equal)
1 - 8 oz container Light Cool Whip

Cream together until smooth sour cream, cream cheese, vanilla and sweetener. Add the whole can of pineapple and the package of pudding, mix together (be careful, mix on your lowest mixer setting because it splashes). Fold in Cool Whip. Can put in a serving bowl or separate into individual size dishes. Also can garnish by sprinkling colored sugar and/or the small colored marshmallows. Serves 8.

Note: This recipe can be made with either regular or sugar-free ingredients. It's good both ways. If using regular ingredients omit the sweetener. Also, vanilla pudding may be substituted for the pistachio.
