1 to 2 lbs. spinach cashews or pecans feta cheese crumbles strawberry or raspberry vinaigrette dressing fresh fruit (sliced strawberries, blueberries, or raspberries)
Wash and remove woody stems from spinach and pat dry or spin dry. Arrange on salad plates with fruit, cheese and nuts. Add dressing to taste. Cooked chicken can also be added. Serves 4-6.
