Ingredient Substitutions
Substitution for Chocolate Baking Squares:
3 level tablespoons cocoa & 1 tablespoon shortening or oil or butter = 1 square (1 oz.)
unsweetened baking chocolate
Substitution for Flour (for thickening):
1 tablespoon cornstarch = 2 tablespoons flour
1 tablespoon minute tapioca = 1 tablespoon flour
Substitution for Cake Flour :
1 cup sifted all purpose flour = 1 cup plus 2 tablespoons sifted cake flour
Substitution Self-Rising Flour:
1 cup all purpose flour plus 1-1/2 teaspoons baking powder = 1 cup self-rising flour
Substitution for Granulated Sugar:
1-1/3 cup brown sugar or 1/2 cup powdered sugar = 1 cup granulated sugar
Substitution for Baking Powder:
1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar = 1 teaspoon baking powder
Substitution for Buttermilk:
1 cup sweet milk plus 1 tablespoon vinegar or lemon juice (stir and let stand
5 minutes) = 1 cup buttermilk
Substitution for Whole Milk:
1/2 cup evaporated milk and 1/2 cup water or
4 tablespoons powdered milk and 1 cup water or
4 tablespoons nonfat dry milk plus 2 teaspoons shortening and 1 cup milk = 1 cup whole milk
Substitution for Molasses:
1 cup honey = 1 cup molasses
Substitution for Honey:
3/4 cup sugar plus 1/4 cup liquid = 1 cup honey
Substitution for Cracker Crumbs:
1 cup bread crumbs = 3/4 cup cracker crumbs
Substitution for Fresh Onion:
1 tablespoon dried onion = 1 small fresh onion
Substitution for Dry Mustard:
1 tablespoon prepared mustard = 1 teaspoon dry mustard
Substitution for Fresh Garlic:
1/8 teaspoon garlic powder = 1 small pressed clove of garlic
Substitution for Canned Tomatoes:
1-1/3 cup cut-up fresh tomatoes, simmered 10 minutes = 1 cup canned tomatoes
Substitution for Tomato Sauce:
1 can (3 oz.) tomato paste plus 1/2 cup water = 8 oz. can tomato sauce
